Quick & Easy Kale Chips (GF, DF, Keto)

One of the things I miss most on the keto diet is potato chips. That’s where kale chips come in. Crunchy, savory, fiber-rich, and healthy! I could eat these all day long. This is one of my favorite recipes, and it really helps me cut cravings and stick to a low-carb diet.

I like to buy the big bags of pre-chopped and pre-washed kale to make my life easier. Sometimes you end up with a bag where the kale is still a bit wet from when it was washed. In those cases, I pat dry with a paper towel before baking. Sprinkle a little nutritional yeast, salt, and olive oil on them, toss them (you may have to get your hands dirty), and they’re good to go into the oven.

Be really careful with how long you cook your kale chips. I made the mistake a couple times of putting them in the oven for 10 minutes, checking on them and noticing they’re still a bit wet, then forgetting them for the next 10 minutes and returning to their charred remains. When they’re getting close to done, check on them every 1 to 2 minutes so you don’t repeat my mistake.

When you put them in the oven, it looks like a ton of food, but by the time they’re done, you will be surprised by how much they shrink. A half pound of raw kale will turn into like 10 kale chips (Ok, I exaggerate). If you’re not careful, you could eat half a bag of kale in one sitting. Hey, there are worse problems than that, right? At least you’re getting your vitamins.

Ingredients
  

  • 4 cups chopped kale I buy the 16oz bags of pre-washed, pre-chopped Kale
  • 2 tbsp olive oil
  • 2 tbsp nutritional yeast
  • 1 pinch salt

Instructions
 

  • Preheat oven to 350F
  • Spread Kale on a baking sheet
  • Add salt, olive oil and nutritional yeast
  • Gently toss to coat evenly
  • Place in oven for 15-20 minutes, checking after 10 minutes
